Ingredients


5-6 kg Whole Suckling Pig, head and trotters on

100g All Purpose Seasoning Mix (Light Brown or Red in colour)

½ cup Olive Oil

2 cups Apple Juice


Method


  1. Carefully select a whole suckling pig, ensuring the head and trotters are intact and that there are no cuts or holes in the skin which may allow meat juice to drip out of. (Making sure the pig has been carefully cleared and cleaned of any insides of course.)
  2. Pre-heat the smoker to 135 °C (275 °F) and ensure you are set up for the indirect cooking method where the meat is not directly near the flame or fire.
  3. Lightly coat the entire suckling pig on all side and edges with olive oil and season with your All-Purpose Seasoning Mix. (The seasoning is for colour only, so anything you have in cupboard will be suitable.)
  4. Red or Light Brown coloured seasoning will yield a nice mahogany colour finish.
  5. Place the Suckling Pig in the smoker with the hind legs tucked under the belly to help close the underside as much as possible. This will help retain most of the meat juice during the cook up. Keep an eye on the cook as you may need to turn the pig inside the cooker to evenly cook and to get the best colour results. If the ears and nose start to become dark early in the cook, you can tear up some foil and wrap the ears and nose to prevent burning.
  6. Once the internal temperature of the pig reaches approx. 82 °C (180 °F), lightly spritz all sides and the edge with apple juice to start to build the final colour.
  7. Continue to spritz every 10-15minutes until the internal temperature reaches 98-100°C (210-212 °F) at which point, the suckling pig will be ready.
  8. Serve on a platter with some flame grilled asparagus, roasted carrots and your favourite salty & pepper gravy.

Purchasing a whole suckling pig direct from a farmer in your local area wherever possible will ensure the freshest quality product.
